Bar staff have immense power, for they do the dispensing. Alcohol is fundamental to societal order. It sedates us, it encourages us, it elevates our collective spirits in these times of gloom. It offers immediate salvation in ways that religion never could and reignites fading passions. It gets us reproducing. It digs our holes and slathers oil onto our contorted backs while we re-fill them, it fixes our smiles while the frozen rain beats down on our repentant faces like electrified needles. Without it everything – EVERYTHING, would instantly rot down and implode into a stinking organic slurry pit. They may or may not be aware of this but it doesn’t matter either way, as they influence regardless. A micro under, a micro over, a brief or lengthy delay, inadequate froth and bubbles, or much too much… you see my point?
